Cabbage & Bacon Soup

Ingredients

  • 25g Butter
  • 2 White Onions, chopped finely
  • 150g Bacon, smoked or unsmoked
  • 1.2 litres Good Stock
  • 500g Savoy Cabbage
  • Freshly Ground Black Pepper
  • Thyme

Method

Melt the butter and cook the onion without burning for 2 mins until beginning to soft.

Add the bacon and increase the heat cooking it until it starts to brown.

Add the stock and bring to the boil.

Add the cabbage a lid to the pan and cook until tender, about 5 mins.

Taste and add lots of pepper and thyme.

Serve, very hot.
