Turkey in a Leek & Mustard Sauce
Ingredients
- 450g Turkey Breast slices
- 1 tbsp Oil
- 300ml Chicken (or Turkey) Stock
- 2 Leeks, medium, thinly sliced
- 90ml Fromage Frais, full fat
- 1 tbsp Whole Grain Mustard
- Seasoning to taste
Method
Gently heat the oil and cook the turkey slices in a large frying pan.
Add the leeks and cook for 2 mins.
Add the stock and simmer for about 15 mins until the turkey is fully cooked.
Stir in the mustard and fromage frais.
Heat through and taste. Adjust seasoning.
Serve with a colourful helping of mixed peppers, courgettes and/or sweetcorn.
