Watermelon Ice Lollies

Serves: 6

Ingredients

  • ½ large watermelon (or 1 small watermelon) approximately 600 g of flesh

Method

Cut the top off the watermelon and scoop out roughly half of the flesh of a large watermelon.

Remove as many seeds from the flesh as you can.

Using a food processor or a stick blender, blend the watermelon flesh until smooth.

Pour into ice lolly moulds and freeze

Try adding lime juice to the watermelon or combine watermelon with the juice of strawberries for different flavours.

Once frozen children can dip the ice lollies into melted chocolate then sprinkle with sugar strands, place back in the freezer on a tray and let the chocolate set.
