Pear and Ginger Flapjacks

Ingredients

  • 100g butter
  • 75g soft light brown sugar
  • 6 Tbsp golden syrup
  • 3 ripe pears - peeled, cored and grated
  • 350g porridge oats
  • 2.5cm piece fresh ginger - peeled and grated

Method

Preheat your oven to gas mark 4 and line a 25cm x 21cm baking tin with greaseproof paper.

Place the butter, sugar and syrup into a saucepan and heat gently until dissolved.

Place the pears, oats and ginger into a bowl and mix together.

Pour the syrup over the oat mixture and mix together.

Spoon into the tin and bake for 20 minutes until golden. Score the baked flapjacks into 12 pieces and leave to cool in the tin before cutting into squares.

These are perfect for picnics or for a little mid-morning snack after fun in the garden.
