Strawberry and spinach summer salad


  • 1 bag (approximately 200g) spinach
  • 1 punnet (approximately 250g) strawberries, sliced and hulled
  • 50g feta cheese
  • 1 yellow pepper, sliced
  • 50g walnuts, halved

For the vinaigrette:

  • 75ml extra virgin olive oil
  • 25ml balsamic vinegar
  • Salt and freshly ground pepper


Wash and dry the spinach and place into a serving bowl.

Wash the strawberries, hull and cut into pieces. Scatter onto the spinach.

Break the feta into pieces and sprinkle over the top of the salad. Add the slices of yellow pepper.

Top with walnut halves.

Pour the olive oil and vinegar into a jam jar, season with salt and pepper, screw on the lid and shake.

Add the vinaigrette to taste and enjoy.
