Cabbage & Bacon Soup

This does not sound nice but it looks good and tastes even better. It is also quick and easy to make

Ingredients

  • 25g Butter
  • 2 White Onions, chopped finely
  • 150g Bacon, smoked or unsmoked
  • 1.2 litres Good Stock
  • 500g Savoy Cabbage
  • Freshly Ground Black Pepper
  • Thyme

Method

  1. Melt the butter and cook the onion without burning for 2 mins until beginning to soft
  2. Add the bacon and increase the heat cooking it until it starts to brown
  3. Add the stock and bring to the boil
  4. Add the cabbage a lid to the pan and cook until tender, about 5 mins
  5. Taste and add lots of pepper and thyme
  6. Serve, very hot

Tips

Good stock is needed for this soup, use your own well flavoured ham stock or use 2 stock cubes
The flavour is even more enhanced if the soup is cooked the day before, cooled and then refrigerated overnight before thoroughly reheating
