Roast Grouse

In season from 12 August, ("the glorious 12th") until the 10 December. Similar to duck in flavour. Easy and simple to roast

  • 1 oven ready Grouse
  • 4 rashers of Bacon, streaky
  • Thyme


  1. Do not wash the grouse, but tie slices of bacon over the breast and tuck in a few sprigs of thyme
  2. Roast for 30mins at 200C, Gas 6, basting frequently
  3. Serve carving the breast and wing in one piece
  4. Garnish with watercress or redcurrants
