Chicken Celestine
Chicken and mushrooms go well together but the addition of spirit and tomatoes adds another dimension
Ingredients
- 4 - 6 Chicken Joints
- 50g Butter
- Liqueur glass of Brandy
- 100ml White Wine
- 75ml Single Cream
- 2 slices Ham
- 200g Tomatoes, skinned
- 100g Button Mushrooms
- Seasoning
Method
- Season the chicken
- Melt the butter in a fireproof dish and add the slices of ham. To this add the chicken and saute until golden on both sides
- Add the brandy, set it alight then add the wine and bubble for 2 minutes
- Add the tomatoes, mushrooms and cream
- Season, cover the pan and cook gently for 30 - 40 mins until the chicken is cooked
- Serve straight away with a salad or green vegetables, pouring the sauce over the chicken
