Chicken Celestine

Chicken and mushrooms go well together but the addition of spirit and tomatoes adds another dimension


  • 4 - 6 Chicken Joints
  • 50g Butter
  • Liqueur glass of Brandy
  • 100ml White Wine
  • 75ml Single Cream
  • 2 slices Ham
  • 200g Tomatoes, skinned
  • 100g Button Mushrooms
  • Seasoning


  1. Season the chicken
  2. Melt the butter in a fireproof dish and add the slices of ham. To this add the chicken and saute until golden on both sides
  3. Add the brandy, set it alight then add the wine and bubble for 2 minutes
  4. Add the tomatoes, mushrooms and cream
  5. Season, cover the pan and cook gently for 30 - 40 mins until the chicken is cooked
  6. Serve straight away with a salad or green vegetables, pouring the sauce over the chicken
