Alsatian Chicken & Cheese Flan

Chicken and cheese a tasty combination with 2 animal protein foods and this recipe suits a variety of settings from family lunches to outdoor picnics


  • 150g Shortcrust Pastry
  • 25g Butter
  • 2 Rashers Streaky Bacon
  • 1 small Onion
  • 50g Mushrooms
  • Small Carton Single Cream
  • 50g Cheddar Cheese
  • 150g Cooked Chicken Breast Meat
  • 1 Egg, beaten
  • Seasoning


  1. Line 20cm flan ring or pie plate with pastry
  2. Set oven 175C Gas Mark 5
  3. Chop the bacon and slice the mushrooms and gently fry in the butter
  4. Add the cream and heat until nearly boiling
  5. Remove from the heat
  6. Grate the cheese and stir into the cream mixture until melted
  7. Add the chicken and beaten egg
  8. Season well
  9. Pour into the pastry case and bake for about 20 mins until set and nicely browned
  10. Serve hot or cold with asaparagus or a mixed tossed salad


Blind bake the pastry for 15 mins at 190C
