Christmas Cake


  • 200g Butter
  • 200g moist Brown Sugar
  • 5 Eggs
  • 200g Plain Flour
  • 200g Sultanas
  • 300g Currants
  • 50g Cherries
  • 100g Chopped Peel
  • 1/2 tsp Salt
  • 2 tsp Black Treacle
  • 50g ground Almonds
  • 1/2 tsp Mixed Spice
  • 1 tsp Baking Powder


  1. Grease and line an 18cm round tin with three layers of greased greaseproof paper.
  2. Pre-heat oven to 170ºC or 150ºC fan
  3. Cream butter and sugar.
  4. Beat in each egg separately with a teaspoon of flour.
  5. When the mixture is light add remainder of flour with baking powder, salt, spice and ground almonds and mixed fruit.
  6. Add warmed black treacle.
  7. Pour into tin. Turn oven temperature down to 150ºC when cake goes in for 21/2 hours, then 140ºC for 1 hour.
