Honey Soda Bread

Ingredients

  • 200g Wholemeal flour
  • 275 g Plain flour, sieved
  • 1 tsp bicarbonate of soda
  • Pinch of salt
  • 300 ml Buttermilk
  • 6 tbsp Honey

Method

Preheat the oven to 200C/Gas mark 6.

In a large bowl, mix the wholemeal flour with the sieved white plain flour. Add the bicarbonate of soda and salt.

Add the buttermilk and the honey to the flour and mix until you get a soft dough.

Turn out onto a floured surface and knead till the mixture is smooth. Shape into a round loaf approximately 20 cm in diameter, cut a cross over the top then cut another cross so that you can see 8 triangles on the top.

Alternatively, divide the dough in half and shape into two smaller loaves, place a cross on each loaf.

Bake on a lightly floured baking sheet for 30 - 40 minutes for the large loaf; 20-30 minutes for the two smaller loaves.

Remove from the oven and it should sound hollow when tapped on the base.

Leave to rest before cutting.

Cover with a clean damp tea towel if a soft crust is desired.

Delicious served warm with butter.
