Turkey in a Leek & Mustard Sauce

Ingredients

  • 450g Turkey Breast slices
  • 1 tbsp Oil
  • 300ml Chicken (or Turkey) Stock
  • 2 Leeks, medium, thinly sliced
  • 90ml Fromage Frais, full fat
  • 1 tbsp Whole Grain Mustard
  • Seasoning to taste

Method

Gently heat the oil and cook the turkey slices in a large frying pan.

Add the leeks and cook for 2 mins.

Add the stock and simmer for about 15 mins until the turkey is fully cooked.

Stir in the mustard and fromage frais.

Heat through and taste. Adjust seasoning.

Serve with a colourful helping of mixed peppers, courgettes and/or sweetcorn.
