Salad Nicoise
A refreshing summer salad originally from the Cote d 'Azure in France; comprising French Beans, anchovies and egg. Serve well chilled with crisp French bread for a light easy summer lunch.
Ingredients
- 1 tbsp Lemon Juice
- Olive oil
- 4 Tomatoes, quartered
- 200g French beans, cooked al dente
- Parsley
- Seasoning
- 2 cloves Garlic
- 1 small tin Anchovies
- 100g Black Olives, stoned
- 2 Eggs, hard boiled, quartered
Method
- Mix the lemon juice with the seasoning
- Gradually stir in 3 tbsp oil
- Cut the garlic in half and rub around the serving dish
- Drain and rinse the oil from the anchovies and add to the mixture
- Add the rest of the ingredients and toss gently with the prepared dressing
- Serve well chilled with crisp bread
Tips
Cooked potatoes, rings of finely sliced red onion and green leaves can also be added
