Roast Grouse
In season from 12 August, ("the glorious 12th") until the 10 December. Similar to duck in flavour. Easy and simple to roast

Ingredients
- 1 oven ready Grouse
- 4 rashers of Bacon, streaky
- Thyme
Method
- Do not wash the grouse, but tie slices of bacon over the breast and tuck in a few sprigs of thyme
- Roast for 30mins at 200C, Gas 6, basting frequently
- Serve carving the breast and wing in one piece
- Garnish with watercress or redcurrants
