Chicken with Tarragon

Serves: 4

Ingredients

  • 1 Chicken about 2.4kg jointed or 8 small Chicken pieces
  • 25g Butter
  • 25g Flour
  • 450ml Milk
  • 150ml Dry white wine, such as Chablis
  • Seasoning
  • 1 Tbsp Tarragon, fresh

Method

Set oven 190C/Gas Mark 5.

Melt Butter and saute the chicken pieces to brown.

Remove the chicken and place the chicken pieces in an ovenproof dish.

Stir in the flour to the pan. Cook gently for 3 mins.

Gradually add the milk and bring to the boil.

Remove from the heat and add the wine, seasoning and tarragon.

Mix well and pour the sauce over the chicken.

Cook for 40 mins until the chicken is cooked through.

Serve sprinkled with a little fresh tarragon.
