Fettucine with Spinach & Blue Cheese

A quick, simple pasta dish with a winning combination also a change from one that contains tomato. This dish is popular even with people who do not love blue cheese.
Serves: 4
Ingredients
- 300g fettuccine
- 1 tbsp olive oil and extra for serving
- 1 garlic clove, chopped finely
- 200lb spinach, washed and large leaves chopped
- 80g walnuts, chopped
- 75g blue cheese, crumbled
Method
- Cook the fettuccine in a pan of boiling water, until al dente.
- Drain but reserve a little of the cooking water.
- Heat the oil in a large frying pan and add the garlic. Cook 1 minute max.
- Add the spinach and cook continuing to stir for 2 mins until wilted.
- Add the fettuccine, blue cheese and walnuts and toss well together.
- Add a little pasta cooking water to create a little sauce if necessary.
- Serve drizzling with olive oil and a twist of freshly ground black pepper.
