Tomato Guacamole

A summery spicy starter, serve with corn chips or sticks of celery or carrot

Serves: 6


  • 8 large ripe Tomatoes
  • 1/2 Green Pepper
  • 2 large ripe Avocado Pears
  • 1 Lemon/Lim
  • 1 clove Garlic, crushed
  • Chilli Powder to taste
  • Seasoning


  1. Skin the tomatoes and scoop out the seeds. (the seeds may be used for stock or soup)
  2. Chop the tomato flesh
  3. Deseed the pepper and chop finely
  4. Remove the stone from the avocados, scoop out the flesh and mash using a wooden spoon
  5. Squeeze the juice from the lemon/lime and mix with the avocado
  6. Add all the other ingredients together with a little salt and pepper
  7. Mix well and serve
