Stuffed Tomatoes
A quick tasty and healthy dish for a snack or as a starter.
Best made when the tomatoes are plentiful and not too soft
Serves: 4
Ingredients
- 4 Beef Tomatoes or large Tomatoes
- 25g Butter
- 1 tbsp chopped Cooked Ham
- 1/2 tbsp Cheddar Cheese, grated
- 1 tbsp Soft white Breadcrumbs
- 1 tbsp White Sauce or Mayonnaise
- Seasoning
Method
- Carefully slice the top off the tomatoes
- Mix breadcrumbs and grated cheese
- Scoop out the flesh of the tomatoes and mix with the butter, ham and sauce in a small pan and gently warm through
- When hot check seasoning and refill the tomato cases and sprinkle the top with the cheese and breadcrumb mixture
- Place on a greased baking sheet and cook Gas 5 180C for about 20 mins until hot
- Serve immediately
Tips
- This is a basic recipe which can be adapted according to the food at hand, eg instead of cooked ham, bacon or cooked chicken could give a good savoury taste
- For a vegetarian dish omit ham and use a mixture of onion and cooked rice, along with vegetarian hard cheese
