Apple, Stilton & Thyme Bruschetta

Different to the usual tomato bruschetta this tangy starter or canape has lots of flavour and is quick and easy to prepare.

Serves: 6 as a starter/12 as canap├ęs

Preparation: 10 mins


  • 2 Small Baguettes, cut into slices on the slant
  • 1 Eating Apple, Cox or other well flavoured Apple
  • 1 tbsp Lemon Juice
  • 3 tbsp Onion Marmalade
  • 75g Blue Stilton cheese, cubed
  • ¾ tsp Thyme, fresh
  • ½ tsp Chives, chopped
  • Black Pepper


  1. Peel, core and cube the apple place in a mixing bowl and mix with the lemon juice to prevent browning
  2. Mix the apple, Stilton, thyme and chives with a good shaking of black pepper
  3. Toast the bread
  4. Place a teaspoon of onion marmalade on each slice of toast
  5. Pile on the apple topping neatly and serve immediately


I used small baguettes, this gave a canape sized morsel, for more substantial appetites used ciabatta or other french sticks
