Turkey in a Leek & Mustard Sauce

Packs of turkey are frequently available at the supermarket. A pack can be used to create a quick, tasty and nutritious family supper


  • 450g Turkey Breast slices
  • 1 tbsp Oil
  • 300ml Chicken (or Turkey) Stock
  • 2 Leeks, medium, thinly sliced
  • 90ml Fromage Frais, full fat
  • 1 tbsp Whole Grain Mustard
  • Seasoning to taste


  1. Gently heat the oil and cook the turkey slices in a large frying pan
  2. Add the leeks and cook for 2 mins
  3. Add the stock and simmer for about 15 mins until the turkey is fully cooked
  4. Stir in the mustard and fromage frais
  5. Heat through and taste. Adjust seasoning
  6. Serve with a colourful helping of mixed peppers, courgettes and/or sweetcorn
