Sausage, Bacon and Bean Bake

Ingredients
- 2 tbsp olive oil
- 12 herby sausages
- 1 large onion, cut into wedges
- 6 rashers of streaky bacon, chopped
- 4 celery sticks, sliced
- 2 garlic cloves, crushed
- 600ml (1 pint) hot vegetable or chicken stock
- 3 tbsp tomato puree
- 400g can of cannellini beans, drained
- 2 tablespoons wholegrain mustard
- Seasoning
Method
Set the oven to 200°C/Gas 6/Fan 180°C.
Put the sausages and onion in the roasting tin and sprinkle with the oil.
Roast for 20 minutes.
Turn sausages and add the bacon, celery and garlic and return to oven and cook for 15 minutes more.
Pour in hot stock, tomato puree and the beans.
Reduce the heat to 180°C/Gas 4/Fan 160°C and bake for 15 minutes more until sausages are cooked.
Stir in the mustard and season.
Tips
If cannellini beans are unavailable use haricot, pinto or kidney beans instead
You could also use Beand in tomato sauce if nothing else is available
