Salad Nicoise

A refreshing summer salad originally from the Cote d 'Azure in France; comprising French Beans, anchovies and egg. Serve well chilled with crisp French bread for a light easy summer lunch.

Ingredients

  • 1 tbsp Lemon Juice
  • Olive oil
  • 4 Tomatoes, quartered
  • 200g French beans, cooked al dente
  • Parsley
  • Seasoning
  • 2 cloves Garlic
  • 1 small tin Anchovies
  • 100g Black Olives, stoned
  • 2 Eggs, hard boiled, quartered

Method

  1. Mix the lemon juice with the seasoning
  2. Gradually stir in 3 tbsp oil
  3. Cut the garlic in half and rub around the serving dish
  4. Drain and rinse the oil from the anchovies and add to the mixture
  5. Add the rest of the ingredients and toss gently with the prepared dressing
  6. Serve well chilled with crisp bread

Tips

Cooked potatoes, rings of finely sliced red onion and green leaves can also be added
