Lamb and Leek Stir Fry

Serves: 4


  • 15ml Apple Juice
  • 450g Welsh Lamb, lean, cut into thin strips
  • 100g Carrot, cut into thin strips
  • 75 -100g Leeks cut into 5cm lengths and shredded
  • 5ml Rosemary, crushed
  • Black Pepper
  • Optional - pinch round Cumin


  1. Heat apple juice in a wok and fry meat for 2 -3 mins until browned.
  2. Reduce heat slightly and add carrots and cook for a further 2 mins, stirring frequently.
  3. Add leeks and rosemary and cook for a further 2 - 3mins.
  4. Season and if liked add cumin, mix well and serve with rice/baked potato or green salad.
