Lamb and Leek Stir Fry
Serves: 4
Ingredients
- 15ml Apple Juice
- 450g Welsh Lamb, lean, cut into thin strips
- 100g Carrot, cut into thin strips
- 75 -100g Leeks cut into 5cm lengths and shredded
- 5ml Rosemary, crushed
- Black Pepper
- Optional - pinch round Cumin
Method
- Heat apple juice in a wok and fry meat for 2 -3 mins until browned.
- Reduce heat slightly and add carrots and cook for a further 2 mins, stirring frequently.
- Add leeks and rosemary and cook for a further 2 - 3mins.
- Season and if liked add cumin, mix well and serve with rice/baked potato or green salad.
