Fish Pie

Serves: 2-3

Ingredients

  • 250g Fish from sustainable sources, fresh, frozen or canned eg cod, coley, gurnard, mackerel, salmon, tuna. A mixture can be used
  • Optional - 2 Eggs, hard boiled & sliced or Tomatoes
  • Sauce
  • 25g Butter or Margarine
  • 25g Flour
  • 250ml Milk
  • a little Parsley, chopped
  • Seasoning
  • Topping
  • 500g Potatoes
  • 25g Butter or Margarine
  • 50ml Milk

Method

Preheat the oven to 200C, Gas 6.

Boil the potatoes for 20 mins until tender. Drain, add the butter or margarine and mash until smooth and creamy.

Make the sauce. Place the butter, flour and milk in a pan and whisk well over a moderate heat. The sauce will become thick, remove the whisk and reduce the heat but continue to stir; simmer for 2  mins. Add seasoning and parsley.

Lay the fish in a baking dish and add the sliced egg or tomato if used.

Pour the sauce over the fish.

Spoon the mashed potato over the sauce.

Bake for 40 mins until golden brown.

Serve with a salad or green vegetables.

Tips

This is a great recipe for using a mixture of fish as well as left over sauce and mashed potato.

Sweet corn can also be added to the filling or finished sauce.

A little grated cheese can be used as a topping or mixed with the potato.
