Crab Cakes
This is a versatile recipe. It serves 4 as a main course, 8 as a starter or you can make small bite size cakes to serve as cocktail snacks
Ingredients
- 450g Crab Meat
- 1 tbsp Mayonnaise
- 2tsp Worcester Sauce
- 1 Egg Yolk
- 1 tsp Mustard Powder
- 1/2 tsp Pepper
- 1 tsp Parsley, chopped
- Flour
- Egg, beaten
- Dry White Breadcrumbs
- Oil to fry
Method
- Place the crabmeat in a bowl and mash lightly with a fork
- Work in the mayonnaise, worcester sauce and egg yolk
- Season with pepper, mustard and parsley
- Divide into 8 equal flat cakes, pressing the mixture firmly together with your hands
- Dip in flour, beaten egg and dry breadcrumbs
- Fry quickly on both sides in shallow hot oil
Serve with lemon wedges and a salad
