Chicken Breasts in Lime & Gin Sauce

A fabulous dish, simple, packing a lot of flavour into easy to obtain ingredients. Lots of protein and little fat in the chicken

Serves: 4


  • 4 Chicken breasts, boneless
  • Oil and butter for frying


  • 1 Onion, Medium, chopped finely
  • 2 Limes, grated rind
  • 1 tsp French Mustard, grainy
  • 4 Tbsp Apricot Jam
  • 1 tsp Tomato Puree
  • 2 tsp Wine or Cider Vinegar
  • 4 tbsp Gin
  • 1 tsp Cornflour, blended with 4 tbsp Water plus half a chicken stock cube


  1. Heat oil and butter in a small frying pan and brown the chicken breasts
  2. Drain and place in an overnproof dish
  3. Add onion to the pan and cook until soft but not coloured
  4. Add the rest of the jngredients and bring up to the boil
  5. Season and pour over the chicken
  6. Bake Gas 5, 190C for 15 mins covered.
  7. Remove the cover, baste and put back in the oven for another 15 mins
  8. Serve immediately with green beans or asparagus and carrot batons
