Autumn Casserole
Pork, apple and sage are classic combinations for a tasty supper dish
Pork is an excellent food for protein and other nutrients, particularly B vitamins. These days pigs are bred much leaner than they used to, so pork is less fatty
Serves: 4
Ingredients
- 4 Pork Steaks/Chops
- 1 Onion, chopped
- 1 tsp Sage
- Seasoning
- 150ml Stock
- 150ml Dry Cider
- 1 Cooking Apple
- 2 Tomatoes
Method
- Put the chops in a thick pan and put over alow heat until the fat runs
- Cook until golden brown on both sides
- Add the onion and cook for 5 mins. Drain off surplus fat
- Add the sage, seasoning, stock and cider
- Cover and cook at 160C/Gas Mark 3 for about 1 hour
- Peel and core the apple and skin the tomatoes
- Cut both into slices and put pone or two apple slices on the pork and top with tomato
- Continue cooking for 15 mins
- Remove the lid and cook for a further 10 mins
Tip
Other autumn fruit and vegetables such as chunks of squash could be added with the tomatoes
