Elderflower Cordial

Usually in blossom in May, to some the Elder is known as the Mayflower. At this time, and while it is sunny gather some blossoms and make this easy delicious drink.


  • 20 heads of Elderflowers, shaken and clean
  • 1.75 kg Sugar
  • l.8 litres Water
  • 50 grams Citric/Tartaric Acid
  • 2 Lemons rind removed and juice


  1. Boil the water and pour into a large mixing bowl
  2. Add the sugar and stir to dissolve it
  3. Allow the water to cool
  4. Add the lemon rind, juice and citric/tartaric acid
  5. Add the elderflowers
  6. Stir and cover. Stand for 24 hours
  7. Strain and bottle
  8. Store in the fridge
  9. Dilute to taste with water. It is ready to drink and will keep for several months
