Cider Cup

Ingredients

  • 200g Sugar, preferably cubes
  • 300 ml Water
  • 1 Lemon
  • 600 ml Chilled cider, still
  • 1/2 wine glass Sherry or Rum
  • 600 ml Soda Water - to taste
  • 3 or 4 slices Red Apple
  • Sprigs of Mint or Borage

Method

  1. Dissolve the sugar in water.
  2. Add the thinly peeled lemon rind.
  3. Bring to the boil.
  4. Strain into a jug.
  5. Chill then add the cider.
  6. When ready to serve, strain in the lemon juice.
  7. Stir in the sherry or rum.
  8. To serve add soda water to taste and a sprig of mint or borage.
