Pink Grapefruit & Vodka Sorbet

Serves: 4

Preparation: 10 minutes + 2 hours freezing

Ingredients

  • 425ml Pink Grapefruit Juice
  • 75g Caster Sugar
  • 3 tbsps Vodka or Gin

Method

Heat a little of the grapefruit juice with the sugar in a small saucepan until the sugar has dissolved.

Remove from the heat and stir in the remaining grapefruit juice together with the vodka or gin.

If using an ice cream machine follow the manufacturer's instructions. Otherwise, pour into a suitable plastic container and freeze until ice crystals form around the edges.

Beat well and return to the freezer.

Repeat this two or three times until the sorbet is thick, smooth and well frozen.

It should not contain any large lumps of ice.

Allow to 'soften' in the fridge for about 15 minutes before serving.
