Pink Grapefruit & Vodka Sorbet
This sorbet looks very pretty and has a wonderful palate-cleansing taste. It can be made by hand, but an ice cream machine is an excellent investment.
Serves: 4
Preparation: 10 minutes + 2 hours freezing
Ingredients
- 425ml Pink Grapefruit Juice
- 75g Caster Sugar
- 3 tbsps Vodka or Gin
Method
- Heat a little of the grapefruit juice with the sugar in a small saucepan until the sugar has dissolved.
- Remove from the heat and stir in the remaining grapefruit juice together with the vodka or gin.
- If using an ice cream machine follow the manufacturer's instructions. Otherwise, pour into a suitable plastic container and freeze until ice crystals form around the edges.
- Beat well and return to the freezer.
- Repeat this two or three times until the sorbet is thick, smooth and well frozen.
- It should not contain any large lumps of ice.
- Allow to 'soften' in the fridge for about 15 minutes before serving.
