Lemon Posset

Serves: 4 - 6

Ingredients

  • 600ml Double Cream
  • 2 Lemons
  • 10ml Dry White Wine
  • Caster Sugar to taste
  • 3 Egg Whites

To serve

  • Whipped Cream & Berries

Method

Grate lemon rinds finely, add to the cream and whisk until stiff.

Stir in lemon juice and wine.

Taste and stir in sugar.

Whisk egg whites until stiff and fold into the cream.

Pour into individual glasses and decorate.

Serve immediately.
