Lemon Posset
A glorious old English dish supremely flavoured with lemon. Perfect for an indulgent moment!
Serves: 4 - 6
Ingredients
- 600ml Double Cream
- 2 Lemons
- 10ml Dry White Wine
- Caster Sugar to taste
- 3 Egg Whites
To serve
- Whipped Cream & Berries
Method
- Grate lemon rinds finely, add to the cream and whisk until stiff
- Stir in lemon juice and wine
- Taste and stir in sugar
- Whisk egg whites until stiff and fold into the cream
- Pour into individual glasses and decorate
- Serve immediately
