Exotic Fruit Platter with Coconut Custard

An exotic light and fruity dessert is perfect after a hot and spicy meal

Serves: 6


  • 1 Pineapple, sliced
  • 1-2 Dragon Fruit, quartered
  • 1 Mango, Sliced
  • 100g Lychees
  • 200g Strawberries
  • 2 Kiwi fruit, sliced


  • 4 Eggs
  • 90g Caster Sugar
  • 250ml Coconut Milk
  • 250ml Milk


  1. Prepare fruit and arrange on a platter or individual plates
  2. Make custard: Beat the eggs and sugar together until thick and creamy
  3. Heat the 2 milks together and when just coming to the boil pour onto the egg mixture
  4. Stir well and pour the mixture into a pan and gently warm to thicken, stirring all the time. Do not boil
  5. Serve immediately
