Exotic Fruit Platter with Coconut Custard
An exotic light and fruity dessert is perfect after a hot and spicy meal

Ingredients
- 1 Pineapple, sliced
- 1-2 Dragon Fruit, quartered
- 1 Mango, Sliced
- 100g Lychees
- 200g Strawberries
- 2 Kiwi fruit, sliced
Custard:
- 4 Eggs
- 90g Caster Sugar
- 250ml Coconut Milk
- 250ml Milk
Method
- Prepare fruit and arrange on a platter or individual plates
- Make custard: Beat the eggs and sugar together until thick and creamy
- Heat the 2 milks together and when just coming to the boil pour onto the egg mixture
- Stir well and pour the mixture into a pan and gently warm to thicken, stirring all the time. Do not boil
- Serve immediately
