Chocolate & Coffee Mousse

Chocolate always provides a satisfying end to a meal and chocolate mousse is quick and simple. Here the addition of rum or brandy raises it to another level.

Serves: 4


  • 100g Plain Chocolate, good quality, with high Cocoa solids
  • 4 Eggs, separated
  • 1ml Strong Black Coffee
  • 15ml Rum or Brandy
  • 150ml Double or Whipping Cream
  • Chocolate Coffee Beans or Chocolate to decorate


  1. Melt the chocolate in a bowl over  a pan of simmering water
  2. Beat the egg yolks with the coffee and rum
  3. Remove the chocolate from the heat and stir in the yolk mixture
  4. Whisk the whites and fold thoroughly into the chocolate mixture
  5. Pour into serving dish/individual glasses/cup and chill
  6. Decorate with a generous swirl of whipped cream and dust with chocolate or coffee beans
