Summer Ratatouille

Serves 6

  • 2 courgettes
  • 1 large aubergine
  • 1 large red onion
  • 100g black olives
  • 2 large red bell peppers
  • 1 large green pepper
  • 3 tomatoes
  • 200g greek feta
  • Handful rosemary and thyme
  • 2 tbsp balsamic vinegar
  • 2 tbsp basil olive oil
  • Salt and pepper

Preheat your oven to gas mark 5. Chop all the vegetables, olives and tomatoes and place into a baking dish with the vinegar, oil, salt and pepper. Cube over the feta and herbs and bake for 30 minutes until the feta has melted and the vegetables are tender. Serve with a fresh, crisp side salad and a warm, freshly baked baguette.
