COD WITH ORANGE AND WALNUTS

Ingredients:

25g/1oz butter

80g/3oz wholemeal breadcrumbs

1 clove of garlic, peeled and crushed

50g/2oz walnuts, finely chopped

finely grated zest and juice of 2 oranges

4 x 175g/6oz cod fillets

salt and pepper

watercress to garnish

Method:

  1. Melt butter in a saucepan. Stir in breadcrumbs, garlic, walnuts and orange zest.
  2. Cook over a low heat, stirring frequently, until breadcrumbs absorb butter.
  3. Season fish and place in a greased shallow ovenproof dish.
  4. Pour over the orange juice and cover with the breadcrumb mixture.
  5. Bake uncovered at fan oven 160º, electric oven 180ºC, gas mark 4 for 20 - 25 mins or until the fish is tender and cooked through.
  6. Garnish with watercress and serve.
