Egg and tuna loaf

This makes a nice change from sandwiches and is ideal for picnics
Ingredients:

1 large round wholemeal or cottage-type loaf
210g/7½oz can tuna fish, flaked
4 eggs, hard boiled and chopped
5ml/1tsp curry powder
salt and pepper
15ml/1tbsp lemon juice
75g/3oz melted butter

Method:

  1. Cut lid from top of loaf and scoop out inside, leaving 1.25 cm/½" wall all around.
  2. Make half of removed inside into breadcrumbs and mix together with all other ingredients and pack mixture into hollowed loaf.
  3. Replace bread lid, wrap loaf in foil.
  4. Bake: fan oven: 175ºC 20-25 mins, conventional oven: preheat 200ºC 25-30 mins shelf 3,gas oven: preheat mark 6 25-30 mins
  5. To serve :- Allow to cool, refrigerate. Cut into thick slices, wrap in foil to take on picnics.

Transport in a cool bag.
