STILTON PASTA

Ingredients:

225g/8oz pasta shapes

1 teaspoon oil

boiling water to cover

2 onions, finely chopped

1 clove garlic, crushed

1 tablespoon oil

3 dessert apples e.g royal gala, sliced

1 tablespoon oil

1 tablespoon white wine vinegar

Stilton pasta
For the sauce:

50g/2oz plain four

50g/2oz butter

570ml/1pt milk

1/2 teaspoon dried basil or tarragon seasoning

175g/6oz Stilton cheese, crumbled

25g/1oz walnuts, chopped

fresh basil or tarragon to garnish

Method:

  1. Place the pasta in a large bowl
    Pour over boiling water to cover and add a teaspoon of oil.
  2. Cover with cling film and cook for 8-10 mins or until the pasta is just tender.
    Make the sauce - In a large microwaveable jug, place the butter, herbs and flour.
  3. Microwave on full power for 30 secs. Stir in the milk, cook to thicken in 1 minute bursts of power whisking thoroughly in between.
  4. Stir in the Stilton cheese and if necessary cook for a further 30 secs to melt. Mix in the pasta. Cover and set aside.
  5. Heat 1 tbsp oil for 30 secs, mix in the chopped onions and cook for 1 min.
  6. Add the garlic if desired and cook for a further 1 min.
  7. Place the onion mixture on a warm serving dish and cover with pasta sauce.
  8. Combine the remaining 1 tbsp oil with the white wine vinegar and add the sliced apples.
  9. Cover and cook for 2-3 mins until just soft and glazed.
  10. Arrange around the pasta.
    Re-heat the whole thing for 3-4 mins and garnish with walnuts, fresh basil and tarragon.
