Method:
- Dry fry seeds in a heavy gauge frying pan, do not leave seeds as they could burn
- Roughly dice the cheeses and dice the melon.
- Place the melon, cheeses and seeds in a large bowl.
- Mix together the oil, lime zest and juice and pour over the salad.
- Chill in fridge until required, serve with lemon wedges
