Watermelon and seed salad

Ingredients:

50g/2oz pumpkin seeds
25g/1oz sunflower seeds
25g/1oz sesame seeds
2 tablespoons extra virgin olive oil
115g/4oz feta cheese
115g/4oz stilton cheese
450g/1lb prepared watermelon, you will need a watermelon of approx 1 kilo in weight
zest and juice of 1 lime
1 lemon cut into wedges
Strawberry meringue roulade
Method:

  1. Dry fry seeds in a heavy gauge frying pan, do not leave seeds as they could burn
  2. Roughly dice the cheeses and dice the melon.
  3. Place the melon, cheeses and seeds in a large bowl.
  4. Mix together the oil, lime zest and juice and pour over the salad.
  5. Chill in fridge until required, serve with lemon wedges
