Salad of spinach, feta, pear and walnuts

Salad of Spinach, feta, pear & walnuts
The sweetness of the spinach and pear are a lovely balance to the feta cheese
Ingredients:

2 Comice pears
4 tablespoons walnut oil
115/4oz baby spinach leaves
175g/6oz feta cheese, diced
80g/3oz walnut pieces
1 teaspoon lemon juice
freshly ground black pepper

Method:

  1. Peel and core the pears and cut each into 16 thin slices.
  2. Toss in a little of the walnut oil.
  3. In a large salad bowl combine the spinach leaves, feta cheese and walnut pieces.
  4. Gently stir in the pears.
  5. Mix together the lemon juice, remaining walnut oil and black pepper, drizzle over salad.
  6. Chill until required.
