| Ingredients:
2 Comice pears 4 tablespoons walnut oil 115/4oz baby spinach leaves 175g/6oz feta cheese, diced 80g/3oz walnut pieces 1 teaspoon lemon juice freshly ground black pepper
Method:
- Peel and core the pears and cut each into 16 thin slices.
- Toss in a little of the walnut oil.
- In a large salad bowl combine the spinach leaves, feta cheese and walnut pieces.
- Gently stir in the pears.
- Mix together the lemon juice, remaining walnut oil and black pepper, drizzle over salad.
- Chill until required.
