Tabouleh

Tabouleh
This is a traditional salad from the middle east
Ingredients:

225g/8oz bulgar wheat dressing
1 teaspoon salt
4 tablespoons olive oil
450ml/¾pint boiling water
4 tablespoons lemon juice
450g/1lb tomatoes, chopped
2 tablespoons fresh mint chopped
½ cucumber
2 tablespoons fresh parsley chopped
4-6 spring onions, chopped
2 cloves of garlic peeled and crushed

Method:

  1. In a large bowl mix the bulgar wheat and salt pour over the boiling water and leave for 15 mins until all the water is absorbed.
  2. Add all the tomatoes, cucumber and spring onions and mix well.
  3. Blend together the dressing ingredients and pour over salad mix thoroughly.
  4. Chill until required
