Pear and red cabbage salad

Pear & Red Cabbage Salad
This is ideal as a salad dish or for a buffet
Ingredients:

80/g/3oz honey
60/ml/4tbsp cold water
45ml/3tbsp red wine vinegar
60ml/4tbsp olive oil
salt and pepper
225g/8oz red cabbage, finely sliced
1 red onion, peeled and sliced thinly
2 sticks of celery, sliced thinly
3 pears, comice or rocha, quartered, cored and sliced

Method:

  1. In a large bowl, mix cabbage, onion, celery and pears with the dressing.
  2. Toss together until well coated.

To make the dressing:

  1. Put the honey and water into a saucepan, melt on a gentle heat then boil without stirring until deep golden.
  2. Take off the heat and cool for 5 mins.
  3. Add vinegar then return to a low heat and stir until smooth.
  4. Cool then whisk in the oil and seasoning.
