Roast halloumi peppers

sweet Peppers
This makes a great light lunch dish or can be included as part of a salad
Ingredients:

6 small peppers, halved through the stalks and deseeded
30ml/2 tbsp extra virgin olive oil
3 cloves of garlic, crushed
12 fresh mint leaves
250g/9oz halloumi cheese, thinly sliced
zest of one lemon
15ml/1tbsp fresh thyme
45/ml/3tbsp pine nuts
30ml/12tbsp lemon juice
salt and freshly ground black pepper

Method:

  1. Rub the pepper skins with a little olive oil
  2. Place skin side down on a baking tray.
  3. Scatter the garlic, cheese, mint, lemon zest, thyme, pine nuts over the peppers, drizzle the remaining oil and lemon juice over the peppers.
  4. Bake in fan oven 180°C, electric oven 200°C or Gas mark 6 for 25 - 35 mins until peppers are tender and charred around the edges.
  5. Serve warm or at room temperature
