| Ingredients:
6 small peppers, halved through the stalks and deseeded 30ml/2 tbsp extra virgin olive oil 3 cloves of garlic, crushed 12 fresh mint leaves 250g/9oz halloumi cheese, thinly sliced zest of one lemon 15ml/1tbsp fresh thyme 45/ml/3tbsp pine nuts 30ml/12tbsp lemon juice salt and freshly ground black pepper
Method:
- Rub the pepper skins with a little olive oil
- Place skin side down on a baking tray.
- Scatter the garlic, cheese, mint, lemon zest, thyme, pine nuts over the peppers, drizzle the remaining oil and lemon juice over the peppers.
- Bake in fan oven 180°C, electric oven 200°C or Gas mark 6 for 25 - 35 mins until peppers are tender and charred around the edges.
- Serve warm or at room temperature
