Method:
- In a small frying pan gently melt the butter and fry shallot until softened and pale golden
- Halve avocado lengthways and remove stone. Scoop out flesh.
- Mash the flesh; mix in the lemon juice, onion, breadcrumbs, cream and seasoning.
- Place mixture back into avocado shells. Place in an ovenproof dish and bake at fan oven 160ºC, electric oven 180ºC or gas mark 4 for 15 - 20 minutes

Serve with brown bread and butter.
