AVOCADO STARTER

Avocado as starter
An avocado makes the perfect starter to share
Ingredients:

1 shallot, peeled and finely chopped

knob of butter

1 ripe avocado pear

1 tablespoon lemon juice

25g/1oz brown breadcrumbs

2 tablespoons double cream

salt and pepper

Method:

  1. In a small frying pan gently melt the butter and fry shallot until softened and pale golden
  2. Halve avocado lengthways and remove stone. Scoop out flesh.
  3. Mash the flesh; mix in the lemon juice, shallot, breadcrumbs, cream and seasoning.
  4. Place mixture back into avocado shells. Place in an oven-proof dish and bake at fan oven 160ºC, electric oven 180ºC or gas mark 4 for 15 - 20 minutes
  5. Serve with brown bread and butter.
