Feta cheese & sage bread

Ingredients:

175g/6oz SR wholemeal flour
5ml/1tsp salt
pinch cayenne pepper
4-5 spring onions, finely sliced
5ml/1tsp chopped sage leaves
115g/4oz feta cheese cut into small cubes
1 medium potato, approx. 175g (6 oz)
1 medium egg
30-45ml/2-3tbsp milk
5ml/1tsp mustard
Method:

  1. Sieve the flour, salt and cayenne pepper together
  2. Stir in the spring onions and sage leaves and two-thirds of the cheese
  3. Peel the potato and coarsely grate into the mixture. Blend together.
  4. Mix together egg, milk and mustard, pour into the mixture, form a rough dough.
  5. Place onto a greased baking tray and form into a 15cm/6 inch round.
  6. Press the remaining feta cheese over the surface & dust with flour.
  7. Bake at 190°C, 375°F, gas 5, fan oven 170°C for 35 - 50 mins until it is golden brown.
  8. Serve slightly warm.
