Ten-minute truffles

These quick to make truffles make wonderful present
Ingredients:

225g/8oz moist ginger cake,
115g/4oz plain chocolate, melted
80g/3oz finely chopped dried apricots
15ml/1 tbsp rum
30ml/2 tbsp cocoa powder
30ml/2 tbsp icing sugar
30ml2/ tbsp grated chocolate

10 Minute Truffles
Method:

  1. Crumble the cake to give fine crumbs. Place in a large mixing bowl.
  2. Stir in the melted chocolate, apricots and rum, mix to a fairly soft mixture.
    Shape into 30 balls .
  3. Whilst still tacky, roll in either cocoa powder, icing sugar or grated chocolate.
  4. Place in petit four cases. Chill until required.
