Soft berry fruits in passion fruit fromage frais

This is a lovely creamy mixture using a selection of small seasonal berry fruits with contrasting textures and tastes. Choose from raspberries, small strawberries, cape gooseberries, kiwi fruit and black or white grapes.

Use some berry fruits with a mild acidic taste to provide a clean, sharp contrast to the bananas.

Soft Berries in Passion Fruitr Fromage Frais
Ingredients:

450g/1lb low fat fromage frais
45ml/3 tbsp thick greek yogurt
40g/1½oz icing sugar, sifted
6 passion fruit, halved
4 small bananas
450g/1lb selection of small berry fruits
10ml/2tsp clear honey

Method:

  1. Put the fromage frais, yogurt and icing sugar into a bowl and mix together.
  2. Scoop the seeds from the passion fruit and fold into the fromage frais mixture.
  3. Peel the bananas, cut into cubes and stir into the bowl.
  4. Reserve some of the soft fruit and mix in the remainder.
  5. Spoon the mixture into glass serving bowls.
  6. Decorate with the reserved fruit and strawberry leaves, if you like.
  7. Drizzle over the honey and serve.
