Strawberry cream

Strawberry Ice Cream
Ingredients:

125ml/5 fl.oz)low fat cottage cheese
125ml/5 fl.oz low fat natural yogurt
30ml/2tbsp runny clear honey
675g/1½ lb fresh strawberries

Method:

  1. Using a wooden spoon push the cottage cheese through a fine plastic sieve into a medium sized bowl.
  2. Add the yogurt and honey  and beat together until smooth.
  3. Slice the strawberries into four, reserving 6 for decoration and divide equally between 6 individual serving glasses.
  4. Spread the mixture evenly over the strawberries and chill in the fridge for at least an hour before serving.
  5. Slice reserved strawberries and place on top of creams before serving.
