Method:
- Cream together butter, honey and lemon rind until light and fluffy.
- Gradually add eggs, fold in flour, baking powder, mixed spice. Stir in fruit and ground almonds. Mix together.
- Spoon into greased and lined 20cm (8inch) deep round tin. Make slight hollow in centre.
- Bake in pre-heated oven 160oC, 325oF/Gas 3 for 2 hours until skewer comes out clean. Cover cake with waxed paper if browning to quickly
- Leave to cool in tin for 10 minutes, then cool completely on to a wire rack.
