Honey fruit cake

ingredients honey fruit cake
Ingredients:

175g (6oz) butter, softened
175g (6oz) clear honey
grated rind of a lemon
3 eggs lightly beaten and grated rind of one lemon
225g (8oz) plain flour
10m (2 tsp) baking powder
5ml (1tsp) mixed spice
115g (4oz) raisins
115g (4oz) sultanas
115g (4oz) chopped dried dates - I replaced these for the currants
50g (2oz) ready to eat dried apricots chopped finely
25g (1oz) ground almonds

Method:

  1. Cream together butter, honey and lemon rind until light and fluffy.
  2. Gradually add eggs, fold in flour, baking powder, mixed spice. Stir in fruit and ground almonds. Mix together.
  3. Spoon into greased and lined 20cm (8inch) deep round tin. Make slight hollow in centre.
  4. Bake in pre-heated oven 160oC, 325oF/Gas 3 for 2 hours until skewer comes out clean. Cover cake with waxed paper if browning to quickly
  5. Leave to cool in tin for 10 minutes, then cool completely on to a wire rack.
