Fruit stir-fry

A glazed fruit pudding, quick and easy to prepare and cook.

Ingredients:

2 oranges
3 small firm bananas
2 pears
1 small melon
1 small pineapple
12-16 small strawberries
100 g (4 oz) seedless grapes
60-90 ml (4-6 tbsp) lemon juice
50 g (2 oz) butter
25 g (1 oz) soft brown sugar
45 ml (3 tbsp) runny honey
45 ml (3 tbsp) orange liqueur

Method:

  1. Peel the oranges and split into segments. Peel bananas and cut into chunks. Coat in lemon juice. Peel and dice pears and coat in lemon juice.
  2. Cut the melon in half, remove the seeds, cut flesh into chunks. Cut the skin from the pineapple and cut flesh into chunks. Stalk and wash strawberries and grapes, drain well.
  3. Heat the wok on a high heat, add the butter and let it melt, stir in sugar and honey and mix well to a thick syrup.
  4. Stir-fry fruit, in this order, pineapple, pears, melon, bananas, oranges, strawberries, grapes, carefully turning them over.
  5. Add the liqueur and stir-fry for 2 minutes.
  6. Serve immediately.
