Breakfast granola

Breakfast granola
Ideal for vegetarians and great tasty treats for everyone else.
Ingredients:

2 tablespoons clear honey
1 tablespoon vegetable oil
110g/4oz rolled oats
2 tablespoons wheatgerm (from health food shops)
25g/1oz hazelnuts, chopped
2 tablespoons desiccated coconut
25g/1oz stoned dates, chopped
25g/1oz raisins

To serve
2-3 bananas, apples or oranges,
peeled and chopped
150ml/¼ pint yoghurt

Method:

  1. Put the honey and oil in a large bowl and microwave on medium heat for 30 seconds. Gently mix in oats, wheatgerm, hazelnuts and coconut.
  2. Remove turntable from microwave, cut a circle of non-stick baking parchment to fit and turn the mixture on to it. Carefully lift the turntable back into the oven.
  3. Microwave on medium for 4-5 minutes until mixture is lightly browned, stirring every minute to prevent hotspots burning. Granola continues to brown after the oven is switched off, so don’t overcook it.
  4. Add the dates and raisins, stir well, then cover and leave to stand for 1 minute. Allow to cool.
  5. Divide the granola between cereal bowls, allowing 1 to 2 tablespoons per person. Serve with chopped fruit and top each portion with a little yoghurt. Store any left-over granola in an airtight jar to keep it crisp.
